Chris Moss travelled to Argentina, re-visiting the Pampas to marvel at the gauchos and stay at some of the most authentic estancias close to Buenos Aires. Estancias are traditionally family country ranches where one is usually looked after by the owners and the asado is a lunch time tradition.
Gauchos are the real cowboys of South America: they live and breathe horses and are most at home outside in the open air, cooking over a fire, galloping after cattle, or enjoying a siesta in the heat of the day.
